Weekly Recipes: Week of 10/07

(1) Crispy Chicken Ranch Wraps

Cook the frozen chicken strips or tenders according to the package instructions. Allow the chicken to cool for a few minutes and then stuff the chicken into large flour tortillas with ranch dressing, lettuce, shredded cheese, and anything else you’d like.

(2) Lazy Lasagna

(3) Chili Cheese Dogs & Tots

No buns here! We’re trying to be healthy so we’re skipping the hotdog buns this week. Grab a pack of your favorite hot dogs, chili, cheese, pickles, onions, tater tots, and any other condiments your hot dog loving heart desires! Cook according to packages.

(4) Broccoli Cheddar Chicken Bake

First time trying this recipe. We’ll be using canned chicken for this recipe.

INGREDIENTS
2 TBS butter
2 cans of chicken
2 1/4 cups low-sodium chicken broth
1 1/4 Cup Minutes White rice
Frozen broccoli
10 oz can cream of chicken soup
1/2 cup Greek yogurt
1/2 cup milk
2 cup Cheddar cheese

Directions
Preheat oven to 350
Lightly grease a 9×13 casserole dish and add all ingredients to large bowl and mix, leaving out 1/2 the cheese.
Before covering, top with the remaining cheese!
Cover and bake for 20 minutes.
Remove from oven and uncover, then bake for another 10 minutes.

(5) One Sheet Pan Chicken Fried Rice

Ingredients

Canned Chicken
salt and pepper to taste
Can of Peas
Carrots (We’re using the kind that’s already cut/shredded)
Green Onions, Chopped
2 eggs, whisked
2 cups white rice
3 tablespoons sesame oil
1/3 cup soy sauce

Instructions

  • Grease a large baking sheet and preheat oven to 375 degrees. Arrange chicken pieces on pan in a single layer so they aren’t overlapping and season with salt and pepper to taste. Bake for 5 minutes.
  • Remove pan from oven, pour whisked eggs around the chicken pieces directly onto the pan. Return to oven for 3-5 minutes until egg is fully cooked. Use a fork or spatula to “scramble” the egg so that it breaks up into small pieces.
  • Add rice and peas, carrots and white onions to pan and toss all ingredients so they are evenly distributed. Drizzle sesame oil and soy sauce over everything and toss again. Sprinkle chopped onions over the top.
  • Bake for 5 minutes longer. Chicken should be cooked through and rice should begin to brown on the bottom of the pan.
  • Toss all ingredients one more time and serve immediately.

Still Here!

Wow, took a 7 month hiatus from posting. Whoops. Work & home life have ramped up.

Weight loss update: I ended phentermine due to not loosing as much weight as expected. While I had a huge burst of energy, I still was loosing about 1lb a week and I eventually got hardstuck at 250lbs. I’m now waiting on locating a pharmacy that has Wegovy in stock, and I’ve gained 5lbs since stopping Phentermine. On a positive note, I have continued pumping iron and have doubled some of my starting weight!!! I am extremely proud with my progress in the gym, and I am trying my best to focus on these gains instead of the fact that I have gained weight.

Expect a post this weekend for the weekly recipe thread! I am working on finances so they won’t be the healthiest but I’ll be trying my best!

Who’s ready for the open beta for the new Diablo? This may be why I am doing this week a bit early. This week’s recipes you should be able to pick up all of your ingredients from Aldis. Enjoy!

Easy Spanish Rice with Ground Beef

Ingredients
  • 1/2 to 1 lb. ground beef
  • 1 large onion, diced
  • 1/2 c. diced bell pepper optional
  • 1 tsp. salt
  • 1 c. Jasmine or long grain rice, uncooked
  • 1/4 tsp. black pepper
  • 2 c. tomato juice
  • 2 c. water
  • 1 c. shredded cheese (cheddar, Mexican blend, Monterey Jack, Colby Jack
Instructions
  • In a large skillet, brown meat, onion and bell pepper. 
  • Add remaining ingredients, except cheese. Cover and simmer 20 minutes or until rice is soft. Add more water if needed.
  • Top with cheese and let sit until melted. (You can also stir the cheese into the rice if you prefer.)

Weekly Recipe Thread: 03/12/2023

As I’ll be working from home these next few weeks, I did not select any meal prep recipes.

Easy Meatball Recipe

I selected this recipe as it calls for carrots and celery in the meatballs. I struggle with getting my vegetables in for the day, so I’m really excited to try this “hidden veggie” recipe.

Cheesy Marinara Beans

Trying something completely out of our “normal” with this recipe! I’m hoping the kids will enjoy this pasta-like recipe, but I think I’m being over optimistic.

Lemon Asparagus & Kielbasa

This is an easy recipe that I’ve thrown together over the years! Recipe below.

Prep Time
About 30 minutes

Ingredients
2 Packages Kielbasa (any brand)
1lb Fresh Asparagus
1 Lemon
Olive Oil
Salt
Pepper
Butter (optional)

Directions:
Preheat oven to 400 degrees.
Rinse & cut the ends off of the asparagus.
Place asparagus on a baking sheet pan; drizzle with olive oil and sprinkle with salt and pepper.
Pro Tip: Use aluminum foil to line the baking sheet for easier cleanup
Cut lemon in half; squeeze one half all over the Asparagus
Cut other half up into slices and place on top of Asparagus
Cut up Kielbasa in little bite sized pieces (or cook whole if you are low on time; my kids prefer the bite sized pieces)
Place Kielbasa on another baking pan/tray.
Put Kielbasa and Asparagus into oven; bake for about 25 minutes.
Optional: Add butter, salt, and pepper to Asparagus to taste

Weekly Recipe Thread: 02/26/2023

This week we are switching it up and meal prepping a lunch recipe, so I only have 2 dinner recipes this week. We are going to see how it works for our family. Historically, we have been terrible at meal prepping!

Hawaiian Pizza Chicken – Lunch Meal Prep

Easy Healthy Lasagna
This recipe does require some prep work and will most likely be made when I am working from home so I can prep the bake on my lunch and pop it in the oven closer to dinner time.

Turkey Taco Bowls
We will be using brown rice instead of rice cauliflower and using a Taco Bell’s taco seasoning packet

Daily Prompt

If you had the power to change one law, what would it be and why?

Not sure I can answer this. There are many laws that I don’t agree with. Are we talking state level? Federal level?

I don’t believe the penalty for not having valid car insurance in Michigan is appropriate. Car insurance can be expensive and tricky to obtain, and really only affects a certain socioeconomic class.

RECIPE THREAD| Week of 02/12/2023

This week’s recipes consist of tacos, smoked sausage with sweet potatoes, and parmesan chicken & cauliflower. I typically use frozen vegetables from Walmart or Meijer to help reduce prep time. I also skip out on some of the seasonings as I have IBS and a sensitive tummy. Enjoy!

Smoked Sausage with Potatoes

For the potatoes, we are going to try using sweet potatoes this time. I also use frozen green beans for these as it reduces prep time.

Parmesan Roasted Chicken & Cauliflower

We will be using frozen cauliflower for this recipe to reduce prep time.

Tacos

No Pinterest recipe for tacos needed. However, I do want to recommend Ortega’s Fiesta Flats. My daughter and I tried these over the weekend and they were delicious! We will be using them for this week’s Taco day. We’ll try to grab some photos of our taco creations this week.
